The attack happened on the A454, near Junction 10 of the M6.
Three vehicles forced a Scania, registration EU04 UZK, to pull off the road.
The driver left his cab and was punched to the floor: the thieves made off with his truck.
The vehicle was fitted with an electronic tracking device and the whole unit with its load intact was discovered within 10 minutes of the attack in Darlaston, Walsall.
The truck was carrying organic foods bound for the pace believe the thieves examined the cargo then discarded it.
The previous day the same truck had been carrying electronic goods.
Detective Constable Andy Round from West Midlands Police's Operation Indicate adds: "Operators should instil in all drivers the need to be vigilant. If in doubt, don't exit the cab and do call 999."
The other vehicles involved in the incident are described as a black pickup, possibly a Mitsubishi on an 04 plate. and a green BMW saloon, perhaps a 5 or 7 Series.
